1. Food manufacture includes the processing of raw ingredients on a factory scale to create food products found in the modern supermarket. A large number of specialists are involved in food industry. They use manufacturing techniques such as chilling, canning, freezing and dehydrating to provide high quality foods. To produce safe, healthy foods food manufacturers should aim at quality assurance and continually increasing standards.
2. Why do we process food? Food processing is the conversion of an agricultural product into substances, which have particular textural, sensory and nutritional properties. The processes involved in manufacturing food products include storage of raw materials, cleaning, sorting, size reduction, mixing, cooking, cooling and so on.
3. A considerable variety of products can be made using similar basic ingredients. If a manufacturing company is to increase sales and remain competitive, it is essential to make new modified food products. The process of making new food is referred to as products development. It involves a complex series of stages such as research, sensory evaluation, product specification and so on.
4. Research is carried out to formulate a number of recipes and specify the ingredients. Several versions of the product are usually made using different ingredients or processes and tested by a professional chef or food consultant. The specification is very important. Product specifications detail exact ingredients and precise methods of production.
5. As for sensory evaluation, it is carried out at many stages of the development process. Trained assessors comment on the appearance, odor, taste and texture of the product to make sure that the product being developed displays the desired sensory characteristics.
